Challenge is latest ‘win’ for bakery

Chantal Papousek sat in her office at her New Hampton bakery and couldn’t help but smile.She had just been asked if she ever expected her Sweet Freedom Gluten Free Bakery to have the success it has had, and the answer was emphatic.“To start where we did less than two years ago and be where we’re at today, it’s been amazing,” she said. “It has just taken off.”And the news may get even better for Papousek and Sweet Freedom.She is currently taking part in the Midwest Food Innovation Challenge competition that is sponsored by ADM.“The funny thing is I wasn’t even going to apply,” she said. “We had been so busy and the application process was lengthy and I kept thinking, ‘I just don’t have the time to do this.’”— For more on this story, see the July 26 Tribune
